Ingredients

Vegetables

  • 2 medium cucumbers (thinly sliced)
  • 2 large avocados (diced)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup fresh cilantro or parsley (chopped)
  • 2 tablespoons lemon juice (or lime juice)
  • 1 tablespoon extra-virgin olive oil

Instructions 

  • Slice cucumbers and red onion; dice avocados and chop herbs.
  • Combine all vegetables and herbs in a large bowl.

  • Add salt, pepper, and red pepper flakes to taste.
