Ingredients

Vegetables

  • 2 medium cucumbers
  • 2 large carrots
  • 0.25 cup fresh parsley or dill
  • 3 tablespoons extra virgin olive oil
  • 1 medium lemon (juice from)

Instructions 

  • Wash and slice cucumbers; peel and grate carrots.
  • Chop herbs finely.
  • Whisk olive oil, lemon juice, salt, and pepper to make dressing.
  • Combine vegetables and herbs; toss with dressing.
  • Chill for 30 minutes before serving.

Notes

For extra flavor, add a pinch of chili flakes or a drizzle of honey.
