Ingredients

Protein

  • 1 lb boneless, skinless chicken breast, finely diced

Vegetables

  • 1 head butter lettuce, leaves separated and washed
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup roasted peanuts, roughly chopped
  • 2 green onions green onions, thinly sliced

Sauce ingredients

  • 1 tbsp vegetable oil or neutral oil for sautéing
  • 1/3 cup creamy peanut butter
  • 3 tbsp soy sauce (low sodium preferred)
  • 1 tbsp fresh lime juice
  • 2 tsp brown sugar
  • 1 tsp grated fresh ginger
  • 1 garlic clove minced garlic
  • 1/4 cup warm water (to thin sauce as needed)
  • 1 tsp chili garlic sauce (optional, for heat)

Instructions 

  • Whisk peanut butter, soy sauce, lime juice, brown sugar, ginger, garlic, and chili sauce if using; add warm water to reach a smooth, pourable sauce. Set aside.
  • Sauté diced chicken in oil until cooked through and golden, about 6-8 minutes.
  • Pour sauce over chicken, stir to coat, and cook for 2 minutes until slightly thickened. Remove from heat.
  • Fill lettuce leaves with chicken mixture and top with vegetables, peanuts, green onions, and cilantro.
  • Fold wraps and serve immediately for a crunchy, flavorful bite.

Notes

For extra heat, add more chili garlic sauce or sliced chili peppers.
