A flavorful and crunchy pasta salad combining tender chicken, fresh vegetables, and a savory sesame dressing.

Ingredients

Pasta and Protein

  • 2 cups cooked rotini pasta
  • 2 cups cooked, shredded chicken breast

Vegetables

  • 1/2 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/2 cup red bell pepper, sliced
  • 1/4 cup green onions, chopped

Dressing

  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1/2 teaspoon ground ginger
  • 1 clove garlic, minced

To taste

  • Salt and pepper (to taste)

Toppings

  • 2 tablespoons sesame seeds

Instructions 

  • Combine pasta, chicken, vegetables, and sesame seeds in a large bowl.
  • Whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic for the dressing.
  • Pour dressing over the salad and toss gently to coat.
  • Refrigerate for 30 minutes before serving.
  • Serve chilled and enjoy!

Notes

For extra crunch, sprinkle additional sesame seeds just before serving.
