A flavorful and crunchy homemade granola with pumpkin spice, perfect for breakfast or snacking.
Ingredients

pepitas (pumpkin seeds, raw or roasted)

Wet ingredients

coconut oil, melted
(or vegetable oil or melted butter)

pumpkin puree

Instructions
Preheat oven to 325°F (163°C). Line baking sheets with parchment.
Mix dry ingredients in a large bowl. Whisk wet ingredients separately, then combine.
Spread mixture on baking sheets and bake for 40 minutes, stirring every 10–15 minutes.
Cool for 20 minutes, then stir in dried cranberries.
Store in an airtight container at room temperature for up to 3 weeks.
Notes
For extra crunch, bake a little longer or store in a cool, dry place.
