Delight in these crunchy, nutty pumpkin pie bars with a buttery oat crust and pecan topping, perfect for fall gatherings.

Ingredients

Crust and topping

  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1/4 teaspoon cinnamon
  • 1/2 cup butter slightly softened (cut in 1 tablespoon increments)

Filling

  • 1 can 12 ounce evaporated milk
  • 1 can 15 ounce pumpkin
  • 2 eggs beaten
  • 1 tablespoon pumpkin pie spice
  • 2/3 cup sugar
  • 1/4 teaspoon cinnamon

Additional dry ingredients

  • 3/4 cup flour
  • 1/2 cup brown sugar
  • 1/8 teaspoon salt
  • 1/2 cup old fashioned rolled oats
  • 1/2 cup chilled butter

Pecan topping

  • 1 cup chopped pecans

Instructions 

  • Preheat oven to 350°F and spray 9x13 inch pan.
  • Pulse oats, brown sugar, flour, and cinnamon; add butter until crumbly. Press into pan and bake 15 minutes.
  • Mix evaporated milk, pumpkin, eggs, spices, and sugar; pour over crust and bake 20 minutes.
  • Combine flour, brown sugar, salt, oats, and butter; sprinkle over pumpkin layer and bake 20 minutes.
  • Sprinkle pecans on top and chill several hours before slicing.

Notes

Chill the bars well before slicing for clean cuts.
