A vibrant and crunchy salad combining fresh vegetables, tender chicken, and a flavorful sesame ginger dressing for a quick, healthy meal.

Ingredients

Vegetables

  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper thinly sliced red bell pepper
  • 3 green onions sliced green onions

Chicken

  • 2 cups cooked chicken breast, shredded
  • ½ cup sliced almonds (toasted)
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon sesame seeds

Dressing

  • ¼ cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon freshly grated ginger
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Juice of ½ lime lime juice

Optional Toppings

  • to taste crispy wonton strips (optional)
  • to taste mandarin oranges (optional)
  • to taste snap peas (optional)

Instructions 

  • Prepare the chicken by grilling, rotisserie, or pan-searing, then shred into bite-sized pieces.
  • Combine green cabbage, red cabbage, carrots, bell pepper, and green onions in a large bowl and toss.
  • Whisk rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and lime juice; slowly add olive oil to emulsify.
  • Add chicken to vegetables, pour dressing, and toss. Top with almonds, sesame seeds, cilantro, and optional toppings. Serve immediately.

Notes

For extra crunch, add crispy wonton strips just before serving.
