Instructions
Prepare the chicken by grilling, rotisserie, or pan-searing, then shred into bite-sized pieces.
Combine green cabbage, red cabbage, carrots, bell pepper, and green onions in a large bowl and toss.
Whisk rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and lime juice; slowly add olive oil to emulsify.
Add chicken to vegetables, pour dressing, and toss. Top with almonds, sesame seeds, cilantro, and optional toppings. Serve immediately.
Notes
