A flavorful and easy-to-make burrito bowl featuring tender shredded chicken cooked with salsa and spices, served over rice with beans and toppings.

Ingredients

Protein

  • 1.5 lbs boneless skinless chicken breasts (or thighs)
  • 10 oz can Rotel (or 1 cup diced tomatoes with green chiles)
  • 1 cup salsa
  • 2-3 tablespoons taco seasoning
  • 2 cups cooked rice (⅔ uncooked rice)
  • 1 cup black beans (15 oz. can, drained, cooked and seasoned)
  • ½ cup guacamole
  • ½ cup shredded cheese

Toppings

  • lettuce, sour cream, diced tomatoes, chopped cilantro, lime wedges

Instructions 

  • Place chicken in crockpot, add Rotel, salsa, and taco seasoning.
  • Cook on High for 3 hours, then shred chicken with forks and mix.
  • Serve over rice with beans, guacamole, cheese, and toppings.

You can customize toppings and spice levels to taste.
