A hearty and flavorful vegetable soup perfect for slow cooking, packed with beans, pasta, and fresh vegetables.

Ingredients

Canned Goods

  • 2 cans diced tomatoes (14 oz each)
  • 1 can tomato sauce (14 oz)
  • 1 can red kidney beans (15 oz, drained)
  • 1 can great northern beans (15 oz, drained)

Vegetables

  • 2 pieces carrots (diced)
  • 2 ribs celery (diced)
  • 1 large onion (diced)
  • 4-5 cloves garlic (minced)
  • 2 tablespoons pesto
  • 4 cups vegetable stock
  • 2 cups water
  • 1 teaspoon dried oregano
  • ½ teaspoon dried rosemary
  • 1 medium zucchini (diced)
  • 1.5 cups ditalini pasta (tubular pasta)

Instructions 

  • Add all ingredients into the crockpot and cook on low 6-8 hours or high 3-5 hours.
  • About 45 minutes before serving, add diced zucchini.
  • 10-15 minutes before serving, add pasta and cook until tender. Serve hot with cheese if desired.

Notes

Use fresh vegetables for best flavor. Adjust cooking time as needed.
