A flavorful and easy-to-make curry chicken cooked in a slow cooker, served with rice and optional cilantro.

Ingredients

Protein

  • 1 pound chicken breasts
  • 3 tablespoons curry powder (mild)
  • 1 teaspoon turmeric powder
  • 0.5 teaspoon ground coriander
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 2 cans coconut milk (15 oz cans) (lite or full fat)
  • 2 tablespoons butter (or olive oil)
  • 2 cloves garlic (crushed)
  • 4 cups sweet potatoes (peeled, cut into ½ to 1-inch cubes)
  • 1 medium sweet onion (finely diced)

To Serve

  • Rice (cooked)
  • Cilantro (optional)

Instructions 

  • Whisk curry powder, turmeric, coriander, salt, sugar, and 1 cup coconut milk. Pour into Crock-Pot, reserving remaining coconut milk.
  • Add butter, garlic, chicken, sweet potatoes, and onions. Stir to combine and submerge chicken.
  • Cook on Low for 5-6 hours or High for 4-5 hours. Stir during last hour and shred chicken.
  • Pour in reserved coconut milk, stir, and let rest for 20 minutes. Serve over rice with cilantro if desired.

Notes

For a thicker sauce, let the curry rest before serving.
