A flavorful and easy-to-make curry chicken cooked in a slow cooker, served with rice and optional cilantro.

curry powder (mild)

turmeric powder

coconut milk (15 oz cans)
(lite or full fat)

butter (or olive oil)

garlic (crushed)

sweet potatoes (peeled, cut into ½ to 1-inch cubes)

sweet onion (finely diced)
To Serve
Rice (cooked)
Cilantro (optional)
Instructions
Whisk curry powder, turmeric, coriander, salt, sugar, and 1 cup coconut milk. Pour into Crock-Pot, reserving remaining coconut milk.
Add butter, garlic, chicken, sweet potatoes, and onions. Stir to combine and submerge chicken.
Cook on Low for 5-6 hours or High for 4-5 hours. Stir during last hour and shred chicken.
Pour in reserved coconut milk, stir, and let rest for 20 minutes. Serve over rice with cilantro if desired.
Notes
For a thicker sauce, let the curry rest before serving.
