Ingredients

Meat

  • 4 pounds beef short ribs

Seasonings

  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Vegetables

  • 1 medium yellow onion (sliced)
  • 3 teaspoons garlic (minced)

Herbs & Sauces

  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 2 teaspoons tomato paste
  • 2 bay leaf bay leaves

Broth & Thickening

  • 3 cups beef broth
  • 3 tablespoons cornstarch

Instructions 

  • Season short ribs with salt and pepper.
  • Sear ribs in hot skillet with olive oil until browned, 1-2 minutes per side.
  • Place onions in crock pot, add ribs on top.
  • Mix garlic, herbs, broth, and sauces; pour over meat.
  • Cook on low for 6-8 hours until tender. Thicken gravy with cornstarch mixture before serving.

Notes

For extra flavor, marinate the ribs overnight before cooking.
