A quick and flavorful vegan stir fry featuring crispy tofu and colorful vegetables in a savory sauce.

Ingredients

Protein

  • 1 lb extra firm tofu (cut into 1-inch cubes)
  • 4 tablespoons cornstarch
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons avocado oil or vegetable oil (divided)
  • 2 cloves garlic (minced)
  • 1 small yellow onion (chopped)
  • 1 cup mixed bell pepper (seeded and cut in 1-inch cubes)
  • 1/4 cup cashew nuts
  • 1 teaspoon cornstarch
  • 1/4 cup low sodium soy sauce
  • 1 teaspoon minced ginger
  • 1 teaspoon chili paste

Instructions 

  • Press tofu between paper towels with a heavy object for 15 minutes.
  • Toss tofu in cornstarch, salt, and pepper to coat.
  • Fry tofu in 1 tbsp oil until golden, then set aside.
  • Sauté garlic, onion, bell pepper, and cashews in remaining oil for 3 minutes. Add tofu back to pan.
  • Mix sauce ingredients, pour into pan, and simmer for 1 minute until thickened.
  • Garnish with green onions and serve hot.

Notes

Ensure tofu is pressed well for maximum crispiness.
