A quick and flavorful vegan stir fry featuring crispy tofu and colorful vegetables in a savory sauce.
Ingredients

extra firm tofu
(cut into 1-inch cubes)

cornstarch

ground black pepper

avocado oil or vegetable oil
(divided)

garlic

(seeded and cut in 1-inch cubes)

cornstarch

low sodium soy sauce

Instructions
Press tofu between paper towels with a heavy object for 15 minutes.
Toss tofu in cornstarch, salt, and pepper to coat.
Fry tofu in 1 tbsp oil until golden, then set aside.
Sauté garlic, onion, bell pepper, and cashews in remaining oil for 3 minutes. Add tofu back to pan.
Mix sauce ingredients, pour into pan, and simmer for 1 minute until thickened.
Garnish with green onions and serve hot.
Notes
Ensure tofu is pressed well for maximum crispiness.
