A vibrant and refreshing salad combining crispy tofu with crisp cucumbers and a tangy Asian-inspired dressing.

Ingredients

Vegetables

  • 2 large English cucumbers (Thinly sliced)
  • 14 oz Firm tofu (Diced into cubes)
  • 2 tbsp Sesame oil
  • 2 tbsp Rice vinegar
  • 2 tbsp Low-sodium soy sauce
  • 1 tbsp Honey
  • 1 tbsp Toasted sesame seeds (For topping)
  • 1/2 tsp Red pepper flakes (Optional)
  • 2 stalks Green onions (Thinly sliced)
  • 2 cloves Garlic (Minced)

Salt and freshly ground black pepper

Instructions 

  • In a bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, garlic, red pepper flakes, salt, and pepper to make the dressing.
  • Heat a non-stick pan and cook the tofu until crispy, about 8-10 minutes.
  • In a large bowl, combine sliced cucumbers, cooked tofu, and green onions.
  • Pour the dressing over the salad and toss gently to combine.
  • Sprinkle toasted sesame seeds on top before serving.

Notes

For extra crunch, add chopped peanuts or cashews.
