Ingredients

Dough

  • 0.75 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 0.25 cup molasses
  • 2.25 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon fine sea salt
  • 0.5 cup granulated sugar (for rolling)

Instructions 

  • Preheat oven to 375°F (190°C). Line baking sheet with parchment.
  • Cream butter and brown sugar until fluffy. Add egg and molasses, mix well.
  • Mix in sifted flour, baking soda, ginger, cinnamon, cloves, and salt. Chill dough 10-15 minutes.
  • Roll dough into balls, coat with sugar, place on sheet, flatten slightly.
  • Bake for 10-13 minutes, cool on sheet 5 minutes before transferring.

Notes

Chilling the dough helps prevent spreading for a better texture.
