Ingredients

Protein

  • 2 pieces boneless (skinless chicken breasts)

Vegetables & Greens

  • 5 cups mixed salad greens
  • 1 cup cherry tomatoes (halved)
  • 1 piece avocado (sliced)

Crispy Toppings

  • 1/2 cup tortilla strips or croutons

Dressing

  • 2 tbsp lime juice
  • 1/4 cup olive oil
  • 1 clove garlic (minced)

Seasonings

Instructions 

  • Grill or pan-fry the chicken breasts until cooked through, then slice.
  • In a small bowl, whisk together lime juice, olive oil, minced garlic, salt, and pepper to make the dressing.
  • In a large bowl, combine salad greens, cherry tomatoes, sliced avocado, and crispy tortilla strips.
  • Top the salad with sliced chicken and drizzle with the dressing.
  • Toss gently to combine and serve immediately.

Notes

For extra crunch, add more tortilla strips or croutons.
