Creamy White Chicken Chili Recipe

A hearty and creamy white chicken chili perfect for cozy meals, packed with flavorful spices and toppings.

Ingredients

olive oil

  • 1 tablespoon olive oil

vegetables

  • 1 small yellow onion (chopped (about ½ cup))
  • 2 cloves garlic (finely minced (or 1 ½ teaspoons garlic powder))

broth and beans

  • 2 1/2 cups low-sodium chicken broth
  • 2 4 oz cans diced green chilies
  • 2 15 oz cans great northern beans
  • 1 cup corn (frozen or fresh)

spices and seasonings

  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon paprika
  • 1/2 small lime (juice from)

seasoning

  • to taste salt and freshly ground black pepper

protein and dairy

  • 2 heaping cups cooked chicken (shredded (rotisserie or left-over chicken*))
  • 1 cup sour cream (or plain Greek yogurt)

toppings

  • as desired fresh cilantro, shredded cheese, avocado slices, tortilla chips, green onions

Instructions 

  • Heat olive oil in a large pot, sauté onion until softened, then add garlic and cook 30 seconds.
  • Add broth, green chilies, spices, lime juice, and season with salt and pepper.
  • Drain and rinse beans; puree a ladleful with broth, then add to the pot along with whole beans and corn. Simmer for 15-30 minutes.
  • Remove from heat, stir in sour cream and shredded chicken. Serve with toppings.

Notes

For extra creaminess, puree some beans. Adjust seasonings to taste.
