Ingredients

Main ingredients

  • 4 pieces skin-on salmon fillets (about 6 oz / 170 g each)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 large garlic cloves (minced)
  • 1/3 cup sun-dried tomatoes (chopped, preferably packed in oil)
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (or fresh oregano, basil, thyme blend)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley (chopped)

Instructions

  • Pat salmon dry, season with salt and pepper. Sear skin-side down in olive oil for 4-5 minutes, then flip and cook 2-3 minutes. Remove and set aside.
  • Lower heat, add butter, sauté garlic for 30 seconds, then add sun-dried tomatoes for 1 minute. Add spinach and cook until wilted, about 2 minutes.
  • Pour in heavy cream, add Italian herbs, simmer briefly. Stir in Parmesan cheese until melted, then add lemon juice.
  • Return salmon to skillet, spoon sauce over, warm through for 1-2 minutes. Garnish with parsley and serve.

Notes

For extra flavor, use sun-dried tomatoes packed in oil and adjust seasoning as needed.
