  • 2 tablespoons olive oil
  • 1.5 pounds boneless skinless chicken breasts
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ cup grated parmesan cheese
  • 1 cup chopped spinach
  • ½ cup drained julienned sun-dried tomatoes

Instructions 

  • Heat olive oil in a skillet and cook chicken for 3-4 minutes per side until fully cooked. Remove and set aside.
  • In the same skillet, whisk together heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan until thickened (~4-5 minutes).
  • Stir in spinach and sun-dried tomatoes; cook for 1 minute until spinach wilts.
  • Return chicken to skillet, coat with sauce, and serve hot.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
