Ingredients
Pasta

rigatoni pasta
(or your favorite pasta shape)
Vegetables

cup
cucumber
(diced)

cup
grape tomatoes
(halved)
½
cup
red onion
(finely chopped)
½
cup
bell pepper
(diced)
½
cup
frozen peas
(thawed)
½
cup
shredded cheddar cheese
(optional)
Dressing
¼
cup
mayonnaise
¼
cup
sour cream

tablespoon
apple cider vinegar
(or lemon juice)

teaspoon
dijon mustard
to taste
salt and pepper

crispy bacon bits
(optional)
Instructions
Cook pasta according to package instructions. Drain and cool.
Chop vegetables and thaw peas. Cook bacon if using.
Whisk together mayonnaise, sour cream, vinegar, mustard, salt, and pepper.
Add pasta, vegetables, and cheese to a bowl. Pour dressing and toss.
Add bacon bits if using and toss again.
Refrigerate for at least 1 hour before serving chilled.
Notes
For extra flavor, let the salad sit overnight in the fridge.
