Ingredients

Protein

  • 1 lb shrimp, peeled and deveined

Base

  • 2 cups cooked rice or salad greens

Sauce

  • 1 tbsp soy sauce or tamari
  • 1 tbsp lime juice
  • 1 tbsp olive oil or sesame oil
  • 1 clove garlic, minced
  • 1/4 cup mayonnaise
  • 1–2 tbsp sriracha (adjust to taste)

Vegetables

  • 1/2 cucumber sliced
  • 1/2 cup shredded carrots
  • 1 avocado sliced
  • 2 green onions chopped
  • 1 tbsp sesame seeds

Optional toppings

  • seaweed strips, pickled ginger, jalapeño slices

Instructions 

  • Cook rice or prepare greens as the base.
  • Toss shrimp with oil, soy sauce, lime juice, and garlic; marinate 5–10 minutes.
  • Cook shrimp in a skillet 2–3 minutes per side until pink; set aside.
  • Mix mayonnaise and sriracha for the sauce.
  • Assemble bowls with rice, shrimp, and vegetables; drizzle sauce and sprinkle sesame seeds.

Notes

Adjust sriracha for desired spice level.
