Ingredients

Pasta

  • 8 ounces fettuccine pasta
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • Salt and pepper to taste Salt and pepper
  • 1/4 cup butter
  • 1 cup heavy cream
  • 1 clove garlic, minced
  • 1.5 cups freshly grated Parmesan cheese
  • 1/4 cup chopped parsley

Instructions 

  • Cook fettuccine according to package; drain and set aside.
  • Sauté shrimp in olive oil until pink; remove and set aside.
  • Melt butter, sauté garlic, then add heavy cream and simmer.
  • Gradually add Parmesan, stirring until smooth; return shrimp and pasta, toss to coat.
  • Garnish with parsley and serve hot.

Notes

For a lighter version, use half-and-half instead of heavy cream.
