This creamy pasta salad is a delightful mix of fresh vegetables and a tangy dressing, perfect for any gathering.

Ingredients

Pasta

  • 3 cups rotini or other short pasta

Dressing

  • 1 cup mayonnaise
  • 1/2 cup sour cream or greek yogurt
  • 1 tablespoon apple cider vinegar or white vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon sugar
  • salt and black pepper, to taste

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup fresh parsley or dill, chopped

Instructions 

  • Boil water, add salt, and cook pasta until al dente. Drain and rinse under cold water.
  • In a bowl, mix mayonnaise, sour cream, vinegar, mustard, and sugar. Season to taste.
  • Combine cooled pasta with tomatoes, cucumber, bell pepper, onion, and cheese in a large bowl.
  • Drizzle dressing over the mixture and toss gently to coat.
  • Stir in parsley or dill, cover, and refrigerate for at least 1 hour.
  • Stir before serving and enjoy chilled!

Notes

For extra flavor, let the salad chill longer before serving.
