Instructions
Preheat oven to 400°F (200°C). Toss potatoes with oil, garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper. Roast for 25-30 minutes.
While potatoes roast, sear chicken in butter until golden, then set aside.
In the same skillet, sauté garlic, add chicken broth, then stir in cream and Parmesan. Simmer until thickened.
Return chicken to skillet, coat with sauce, cook for 5 minutes. Serve with roasted potatoes, garnish with parsley.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of additional herbs.
