  • 4 pieces boneless, skinless chicken breasts
  • 2 cups baby potatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 1 cup heavy cream
  • ½ cup chicken broth
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced

Instructions 

  • Preheat oven to 400°F (200°C). Toss potatoes with oil, garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper. Roast for 25-30 minutes.
  • While potatoes roast, sear chicken in butter until golden, then set aside.
  • In the same skillet, sauté garlic, add chicken broth, then stir in cream and Parmesan. Simmer until thickened.
  • Return chicken to skillet, coat with sauce, cook for 5 minutes. Serve with roasted potatoes, garnish with parsley.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of additional herbs.
