Ingredients

Dressing

  • 150 grams full-fat Greek yogurt (or plain full-fat yogurt)
  • 1.5 tablespoons extra virgin olive oil
  • 1.5 tablespoons fresh lemon juice
  • 0.25 teaspoon garlic, finely grated
  • 0.5 teaspoon fine sea salt (or to taste)
  • 0.2 teaspoon freshly ground black pepper (or to taste)
  • 670 grams English cucumbers (about 2 long cucumbers, thinly sliced)
  • 0.5 medium red onion (very finely sliced)
  • 0.25 cup fresh dill (finely chopped)

Instructions 

  • Whisk together yogurt, olive oil, lemon juice, garlic, salt, and pepper to make the dressing.
  • Wash and thinly slice cucumbers and red onion.
  • Combine sliced vegetables and chopped dill in a large bowl.
  • Pour dressing over the vegetables and toss gently to coat.
  • Serve immediately or refrigerate for 30 minutes to enhance flavors.

Notes

This salad is best enjoyed fresh but can be chilled for 30 minutes before serving for a more melded flavor.
