A refreshing and creamy cucumber salad perfect for a light side dish or snack, featuring fresh dill and red onion.

Ingredients

Vegetables

  • 1 piece English cucumber
  • 1 teaspoon salt
  • 0.5 cup sour cream
  • 1 teaspoon white vinegar
  • 1 teaspoon white sugar (see note)
  • 1 tablespoon chopped fresh dill
  • to taste pepper Pepper
  • 3-4 tablespoons finely chopped red onion

Instructions 

  • Slice the cucumber thin and sprinkle with salt. Let sit for 30 minutes, then rinse and dry.
  • Mix sour cream, vinegar, sugar, dill, and pepper to make the dressing. Chill until needed.
  • Chop the red onion and place in a salad bowl.
  • Add the cucumber to the bowl, pour dressing over, and toss. Serve immediately.

Notes

Eat soon to prevent the salad from becoming watery.
