A delicious and creamy pasta salad featuring sweet corn, fresh herbs, and a tangy dressing, perfect for summer gatherings.

Ingredients

Pasta

  • 200 grams pasta

Corn

  • 3 ears ears of corn (about 3 cups)

Salt and pepper

  • to taste salt and pepper

Oil

  • 2 teaspoons oil

Green onion

  • 0.5 cup green onion

Onion

  • 0.5 cup chopped onion

Cilantro

  • 0.33 cup fresh cilantro

Cheddar cheese

  • 1 cup shredded cheddar cheese

Mayo

  • 0.5 cup Mayo

Sour cream

  • 0.33 cup sour cream

Lemon juice

  • 2 teaspoons fresh lemon juice

Garlic powder

  • 1 teaspoon garlic powder

Pepper

  • to taste pepper

Instructions 

  • Cook the pasta according to package instructions, then drain and set aside.
  • Shuck the corn and cut the kernels off the cob.
  • In a large bowl, combine cooked pasta, corn kernels, chopped onion, green onion, cilantro, cheddar cheese, mayo, sour cream, lemon juice, garlic powder, salt, and pepper.
  • Toss everything together until well coated and season to taste.
  • Serve immediately or chill in the refrigerator before serving.

Notes

For extra flavor, add a squeeze of lime or a dash of hot sauce.
