A delightful and creamy fruit salad featuring crisp apples, walnuts, and a hint of cinnamon.

Ingredients

Dressing

  • 227 g neufchatel cheese, softened ((light cream cheese))
  • 100 g light brown sugar (packed)
  • 2 tsp ground cinnamon
  • 0.5 g ground nutmeg
  • 227 g light sour cream
  • 5 ml vanilla extract
  • 1814 g crisp sweet apples ((chilled, diced))
  • 480 ml cold water ((for soaking apples))
  • 30 ml fresh lemon juice ((for soaking apples))
  • 120 g chopped walnuts
  • 100 g dried cranberries

Instructions 

  • In a bowl, whip Neufchatel cheese, brown sugar, cinnamon, and nutmeg until fluffy.
  • Add sour cream and vanilla, blend, and chill.
  • Combine water and lemon juice in a bowl. Dice apples and soak briefly.
  • Mix apples with 3/4 of walnuts, cranberries, and cheese mixture.
  • Toss to coat and top with remaining walnuts and cranberries. Serve chilled.

Notes

Best served chilled within an hour for optimal freshness.
