Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (diced)
  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and black pepper to season
  • 4 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon dried oregano
  • 1 can crushed tomatoes (28 ounces)
  • 2 tablespoons tomato paste
  • ½ cup chicken broth
  • ½ teaspoon salt (adjust to taste)
  • ¾ cup heavy cream (or cream cheese for extra richness)
  • ½ cup Parmesan cheese (freshly grated)

Garnish

  • to taste Fresh basil or parsley (for garnish)

Instructions 

  • Cook the penne pasta according to package instructions; drain and set aside.
  • In a large skillet, heat olive oil and cook diced chicken until browned; remove and set aside.
  • In the same skillet, sauté garlic, onion, red pepper flakes, and oregano until fragrant.
  • Add crushed tomatoes, tomato paste, chicken broth, salt, and simmer for 10 minutes.
  • Stir in heavy cream and Parmesan cheese; add cooked chicken and pasta, then toss to combine.

Notes

For extra flavor, garnish with fresh basil or parsley before serving.
