Instructions
Cook pasta in salted boiling water until al dente; reserve 1 cup of water.
Season chicken with half the spices, cook in olive oil until browned, then set aside.
Make sauce: sauté onion and garlic, whisk in flour, tomato paste, then gradually add pasta water and cream; stir in spinach and half the cheeses.
Combine pasta, chopped chicken, and sauce in a casserole dish; top with remaining cheese.
Bake at 375ºF for 20-25 minutes until bubbly and golden; serve immediately.
Notes
For a lighter version, use less cheese or substitute with low-fat options.
