A comforting and cheesy baked pasta dish featuring tender chicken, spinach, and a creamy sauce, perfect for family dinners.

Ingredients

Pasta

  • 8-10 oz pasta (any shape)

Chicken

  • 2-3 medium medium chicken breasts

Spices

  • 1 teaspoon each garlic powder, onion powder, paprika, Italian seasoning, red pepper flakes, salt, black pepper

Olive Oil

  • 1 Tablespoon olive oil

Butter

  • 1 Tablespoon butter

Onion

  • ½ medium medium onion (diced)

Garlic

  • 4-5 cloves garlic (minced or crushed)

Tomato Paste

  • 2 Tablespoons tomato paste

Flour

  • 1 Tablespoon flour

Pasta Water

  • 1 cup pasta water

Heavy Cream

  • 2 cups heavy cream

Spinach

  • 2-3 cups fresh spinach (chopped)

Mozzarella Cheese

  • 2 cups mozzarella cheese (shredded)

Parmesan Cheese

  • ½ cup parmesan cheese (grated)

Instructions 

  • Cook pasta in salted boiling water until al dente; reserve 1 cup of water.
  • Season chicken with half the spices, cook in olive oil until browned, then set aside.
  • Make sauce: sauté onion and garlic, whisk in flour, tomato paste, then gradually add pasta water and cream; stir in spinach and half the cheeses.
  • Combine pasta, chopped chicken, and sauce in a casserole dish; top with remaining cheese.
  • Bake at 375ºF for 20-25 minutes until bubbly and golden; serve immediately.

Notes

For a lighter version, use less cheese or substitute with low-fat options.
