Instructions
Season chicken with salt, pepper, and oregano.
Cook chicken in butter over medium-high heat until browned, then set aside.
In the same pan, cook onion, garlic, sun-dried tomatoes, and remaining butter. Add broth, cream, and Parmesan, simmer until smooth.
Add spinach and cook until wilted, then reheat chicken in sauce for 2-3 minutes.
Serve immediately, garnished with chopped parsley if desired.
