A delicious and creamy chicken dish featuring tender breasts in a flavorful spinach and Parmesan sauce, perfect for a satisfying meal.

Ingredients

Protein

  • 2 pieces chicken breasts
  • 3 tablespoons butter (divided)
  • 0.5 teaspoon salt and pepper (or to taste)
  • 1 teaspoon oregano
  • 1 medium onion (minced)
  • 4 cloves garlic (minced)
  • 1 small jar sun-dried tomatoes (drained and chopped)
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 cup spinach (or more if you like)

Instructions 

  • Season chicken with salt, pepper, and oregano.
  • Cook chicken in butter over medium-high heat until browned, then set aside.
  • In the same pan, cook onion, garlic, sun-dried tomatoes, and remaining butter. Add broth, cream, and Parmesan, simmer until smooth.
  • Add spinach and cook until wilted, then reheat chicken in sauce for 2-3 minutes.
  • Serve immediately, garnished with chopped parsley if desired.

Notes

For extra flavor, sprinkle with fresh parsley before serving.
