diced yellow onion

chicken broth

heavy cream

grated Parmesan cheese

Instructions
Pat chicken dry and season with 1.5 tbsp Cajun seasoning, salt, and pepper.
Heat oil and 1 tbsp butter in a skillet. Cook chicken 5-7 mins per side until golden. Remove and set aside.
Melt remaining butter, cook onion 3-4 mins, then add garlic and cook 1 min.
Deglaze with chicken broth, add cream and remaining Cajun seasoning. Simmer 2-3 mins until thickened.
Stir in Parmesan, return chicken to skillet, spoon sauce over, garnish with parsley, and serve.
Notes
For extra flavor, let the sauce simmer a bit longer to thicken more.
