This flavorful Cajun chicken recipe comes together in just 30 minutes, perfect for a quick and satisfying weeknight dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (about 6 oz each)
  • 2 tbsp Cajun seasoning (divided)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter (divided)
  • 1/2 cup diced yellow onion
  • 4 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions 

  • Pat chicken dry and season with 1.5 tbsp Cajun seasoning, salt, and pepper.
  • Heat oil and 1 tbsp butter in a skillet. Cook chicken 5-7 mins per side until golden. Remove and set aside.
  • Melt remaining butter, cook onion 3-4 mins, then add garlic and cook 1 min.
  • Deglaze with chicken broth, add cream and remaining Cajun seasoning. Simmer 2-3 mins until thickened.
  • Stir in Parmesan, return chicken to skillet, spoon sauce over, garnish with parsley, and serve.

Notes

For extra flavor, let the sauce simmer a bit longer to thicken more.
