Ingredients

Oil

  • 1 tablespoon oil

Chicken breasts

  • 2 large chicken breasts (sliced in half lengthways)

Salt

  • to taste Salt

Pepper

  • Pepper

Butter

  • 1 tablespoon butter

Onion

  • 1 small small onion (finely diced)

Garlic cloves

  • 2 cloves garlic cloves (finely diced or minced)

Cream cheese

  • 8 oz cream cheese (softened)

Chicken broth

  • 1 cup chicken broth

Dijon mustard

  • 1 teaspoon dijon mustard

Italian seasoning

  • 1/2 teaspoon Italian seasoning

Parsley

  • 1/4 cup fresh parsley (finely chopped)

Instructions 

  • Season chicken with salt and pepper. Cook in oil until golden, then set aside.
  • Sauté onion in butter until softened, then add garlic and cook briefly.
  • Add cream cheese, broth, mustard, and Italian seasoning; cook until sauce thickens.
  • Return chicken to skillet, heat through, then garnish with parsley before serving.

Notes

For a richer flavor, use full-fat cream cheese and fresh herbs.
