  • 1 tablespoon olive oil

  • 1 cup fresh spinach, chopped
  • 1/3 cup dried cranberries
  • 4 ounces brie cheese, sliced (rind removed if desired)
  • 1/2 teaspoon dried thyme
  • 1 tablespoon honey (optional, for drizzle)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut a pocket into each chicken breast and season inside and out with salt, pepper, and garlic powder.
  • Mix chopped spinach and cranberries; stuff into chicken along with brie slices. Secure with toothpicks if needed.
  • Heat oil in a skillet, sear chicken 2-3 minutes per side until golden. Transfer to oven and bake 18-22 minutes.
  • Sprinkle thyme, then bake until cooked through. Optional: drizzle with honey before serving.
