A flavorful and hearty side dish combining wild rice, sweet potatoes, cranberries, and pecans for a festive touch.

Ingredients

Broth and Rice

  • 2 cups chicken broth
  • 1 cup wild rice blend
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme

Sweet Potatoes and Aromatics

  • 1 tablespoon olive oil
  • 1 cup sweet potato, diced small
  • 1/4 cup onion, chopped

Add-ins

  • 1/3 cup dried cranberries
  • 1/3 cup pecans, chopped

Garnish

  • fresh parsley, for garnish

Instructions 

  • Bring chicken broth to a boil, add rice and seasonings. Simmer covered for 30 minutes.
  • Saute sweet potatoes in olive oil until tender, about 15 minutes. Add onion and cook until translucent.
  • Stir in cranberries and pecans, cook for 1-2 minutes.
  • Combine the rice and sweet potato mixture, fluff, garnish with parsley, and serve.
