Delight in these moist and flavorful mini muffins packed with fresh cranberries and zesty orange, perfect for a quick breakfast or snack.

Ingredients

Dry ingredients

  • 2 cups white whole wheat flour or gluten-free flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 2 tbsp orange zest (about 2 large oranges)

Wet ingredients

  • 1 tbsp unsalted butter or coconut oil, melted and cooled slightly
  • 2 large egg whites egg whites (room temperature)
  • 2 tsp vanilla extract
  • 1.5 tsp vanilla crème stevia
  • 0.5 cup plain nonfat Greek yogurt
  • 0.25 cup freshly squeezed orange juice (about 1 large orange)
  • 0.5 cup nonfat milk
  • 1 cup fresh cranberries, finely diced

Instructions 

  • Preheat oven to 350°F (175°C). Lightly spray 32 mini muffin cups.
  • Mix dry ingredients and orange zest in a bowl.
  • Whisk melted butter, egg whites, vanilla extract, and vanilla crème stevia. Add yogurt and orange juice.
  • Alternate adding dry mixture and milk to the wet ingredients, stirring gently. Fold in cranberries.
  • Divide batter into muffin cups and bake for 12-15 minutes. Cool before serving.

Notes

Use fresh cranberries for best flavor and texture.
