Ingredients

Vegetables

  • 2 cups frozen corn, thawed
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions 

  • Thaw corn and drain excess water.
  • Mix corn, tomatoes, cucumber, onion, and feta in a bowl.
  • Whisk together mayonnaise, sour cream, lime juice, garlic powder, chili powder, salt, and pepper; pour over salad.
  • Toss gently to coat and chill for at least 30 minutes.
