A hearty and flavorful casserole combining ground meat, beans, corn, and cornbread for a satisfying meal.

Ingredients

Protein

  • 1 lb ground beef (or turkey, or meat substitute for a vegetarian option) (Choose your preferred protein.)

Beans

  • 1 can black beans, rinsed and drained (Can substitute with other beans.)

Corn

  • 1 can corn, drained

Vegetables

  • 1 medium onion, diced
  • 2 cloves garlic, minced

Canned Goods

  • 1 can diced tomatoes with green chilies

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon cumin

Seasonings

  • to taste Salt and pepper

Baking Mix

  • 1 box cornbread mix

Eggs

  • 1 large egg

Dairy

  • 1 cup milk

Cheese

  • 1 cup shredded cheddar cheese (Optional, for added flavor)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook ground beef with diced onion and minced garlic until browned.
  • Mix cooked meat, beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper in a baking dish.
  • Prepare cornbread batter with mix, egg, milk, and cheese; spread over the meat mixture.
  • Bake for 25-30 minutes until golden and cooked through.

Notes

For a vegetarian version, substitute meat with plant-based protein and omit cheese.
