A fresh and flavorful couscous salad perfect for a light lunch or side dish, packed with vegetables and herbs.
Ingredients
Couscous

Couscous plain, uncooked

Hot water or vegetable broth
Vegetables and herbs

Cherry tomatoes, chopped

Salt and black pepper
Instructions
Place couscous in a bowl, pour hot water or broth, add olive oil and salt, cover, and let sit for 5 minutes.
Fluff the couscous with a fork and let it cool slightly.
Add chopped vegetables, herbs, and chickpeas if using.
Mix olive oil, lemon juice, salt, and pepper to make the dressing, then pour over the salad and toss gently.
Let the salad rest for 10–15 minutes before serving to blend flavors.
Notes
For extra flavor, add a pinch of cumin or paprika to the dressing.
