A fresh and flavorful couscous salad perfect for a light lunch or side dish, packed with vegetables and herbs.

Ingredients

Couscous

  • 1 cup Couscous plain, uncooked
  • 1.25 cups Hot water or vegetable broth

Vegetables and herbs

  • 0.5 cup Cherry tomatoes, chopped
  • 0.25 cup Cucumber, diced
  • 0.25 cup Red onion, finely chopped
  • 2 tbsp Fresh parsley, chopped
  • 1 tbsp Fresh mint, chopped (optional)
  • 0.25 cup Bell pepper, diced
  • 0.5 cup Chickpeas (optional)

Dressing

  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • to taste Salt and black pepper

Instructions 

  • Place couscous in a bowl, pour hot water or broth, add olive oil and salt, cover, and let sit for 5 minutes.
  • Fluff the couscous with a fork and let it cool slightly.
  • Add chopped vegetables, herbs, and chickpeas if using.
  • Mix olive oil, lemon juice, salt, and pepper to make the dressing, then pour over the salad and toss gently.
  • Let the salad rest for 10–15 minutes before serving to blend flavors.

Notes

For extra flavor, add a pinch of cumin or paprika to the dressing.
