Ingredients

Dough

  • 2 cups cottage cheese
  • 2 cups all-purpose flour (plus more for rolling)
  • 2 teaspoons baking powder
  • 1/4 cup baking soda
  • 1 large egg (whisked with 1 tablespoon water)
  • 1 tablespoon water

Topping

  • as needed pretzel salt (optional)

Instructions 

  • Preheat oven to 450°F (230°C). Line baking sheets with parchment.
  • Blend cottage cheese until smooth, then mix with flour, baking powder, and salt. Knead into a smooth dough, divide into 6 pieces.
  • Roll each piece into a 20-inch rope, twist into pretzels, and secure ends.
  • Boil water with baking soda, then dip pretzels for 30 seconds. Remove and place on baking sheets.
  • Brush with egg wash, sprinkle with salt if desired, then bake for 15-18 minutes until golden.

Notes

Re-flour work surface as needed to prevent sticking.
