A creamy, high-protein queso dip packed with fresh veggies and bold flavors, perfect for sharing with chips or veggies.
Ingredients

Roma or plum tomato (diced with juices)

milk (cow's or unsweetened almond or cashew)

Instructions
Blend the cottage cheese until smooth and set aside.
Sauté poblano, onion, and salt in oil until soft and golden, about 5-10 minutes.
Add diced tomato and cook for 4-5 minutes until softened.
Stir in spices and set aside 2 tbsp of veggie mixture for garnish.
Mix blended cottage cheese with shredded pepper jack, then add to the skillet off heat, stirring until melted.
Pour the mixture into a blender with milk and blend until velvety smooth, about 30 seconds.
Notes
For a creamier queso, blend longer or add more milk as needed.
