A refreshing and healthy salad combining creamy cottage cheese with crisp cucumber and fresh dill, perfect for a light snack or side dish.

Ingredients

Dairy

  • 2 cups cottage cheese

Vegetables

  • 1 large cucumber (diced)

Herbs

  • 3 tablespoons fresh dill (finely chopped)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions 

  • Wash and dice the cucumber into small, uniform pieces. Pat dry.
  • Finely chop the dill and set aside some sprigs for garnish.
  • Combine cottage cheese, cucumber, and dill in a bowl.
  • Add salt, pepper, and olive oil; gently mix.
  • Refrigerate for 15 minutes. Serve garnished with dill sprigs.

Notes

For extra flavor, add a squeeze of lemon before serving.
