A refreshing and flavorful noodle salad with a creamy tahini sauce, perfect for a quick, healthy meal.

Ingredients

Sauce

  • 1/2 cup tahini
  • 1/3 cup low sodium soy sauce (or tamari)
  • 2 cloves garlic (peeled)
  • 1 inch fresh ginger (peeled)
  • 1 jalapeƱo cut in chunks
  • 2 limes juiced
  • 1 tablespoon sriracha
  • 2 tablespoons sesame oil

Noodles

  • 8 ounces noodles (linguine, spaghetti or rice noodles)
  • 2 bell peppers sliced
  • 1/2 small head green cabbage (shredded)
  • 1/2 small head purple cabbage (shredded)
  • 2 carrots shredded
  • 1 bunch cilantro (chopped)
  • 5 green onions chopped

Instructions 

  • Cook the noodles according to package instructions, then drain and rinse with cold water.
  • Blend all sauce ingredients until smooth, then taste and adjust seasonings.
  • Combine noodles, veggies, and sauce; toss and serve chilled or at room temperature.

Notes

Feel free to add more lime juice or sriracha for extra flavor.
