A quick and flavorful cold noodle dish with a spicy peanut sesame sauce, perfect for a refreshing meal.

Ingredients

Noodles

  • 3/4 pound dried spaghetti noodles (or Asian rice noodles)
  • 2/3 cup water
  • 1/3 cup smooth peanut butter
  • 1/4 cup low sodium soy sauce
  • 1/4 cup seasoned rice vinegar
  • 3 tablespoon dark brown sugar (packed)
  • 1/4 cup roasted peanut oil
  • 2 tablespoon toasted sesame seeds (plus more for topping)
  • 3 teaspoon chili garlic sauce
  • 1 teaspoon sesame oil
  • 1 inch piece of ginger (peeled)
  • 1 clove small garlic

Fresh scallions (chopped, for topping)

Instructions 

  • Cook noodles in boiling water until al dente, then drain.
  • Blend water, peanut butter, soy sauce, rice vinegar, sugar, oils, sesame seeds, chili sauce, ginger, and garlic until smooth.
  • Mix sauce with cooked noodles, then refrigerate for at least 1 hour.
  • Before serving, toss noodles again and top with scallions and sesame seeds.

Notes

Chill the noodles thoroughly for the best flavor and texture.
