Ingredients

Pasta Salad Ingredients

  • 12 oz pasta (penne, fusilli, or bowtie)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 1 tbsp dijon mustard
  • 1 clove garlic, minced
  • 1 tsp honey
  • salt and pepper to taste

Instructions 

  • Cook pasta until al dente, then drain and rinse with cold water.
  • In a large bowl, combine pasta, tomatoes, cucumber, onion, olives, feta, parsley, and basil.
  • Whisk together olive oil, lemon juice, mustard, garlic, honey, salt, and pepper for the dressing.
  • Pour dressing over salad and toss to coat.
  • Refrigerate for at least 30 minutes before serving.

Notes

For added flavor, let the salad sit in the fridge longer before serving.
