Instructions
Heat olive oil in a skillet over medium heat. Add diced onion, bell pepper, and minced garlic; cook until softened.
Add ground beef, salt, and black pepper; cook until browned.
Stir in diced tomatoes, beef stock, rice, tomato paste, and Worcestershire; bring to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
Sprinkle with shredded cheddar and parsley; serve hot.
