  • 1 tbsp olive oil
  • 1 lb ground beef (80/20 for flavor and moisture)
  • 1 medium onion (diced into 1/2-inch pieces)
  • 1 small bell pepper (diced)
  • 2 cloves garlic (freshly minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 14.5 oz diced tomatoes (Hunt's for thick consistency)
  • 1.5 cups beef stock
  • 1 cup rice
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire
  • 1 cup cheddar (Kerrygold for richness and melting)
  • 1.5 tbsp parsley

Instructions 

  • Heat olive oil in a skillet over medium heat. Add diced onion, bell pepper, and minced garlic; cook until softened.
  • Add ground beef, salt, and black pepper; cook until browned.
  • Stir in diced tomatoes, beef stock, rice, tomato paste, and Worcestershire; bring to a boil.
  • Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
  • Sprinkle with shredded cheddar and parsley; serve hot.

Notes

For extra flavor, let the dish rest for 5 minutes before serving.
