A hearty and comforting chicken pot pie featuring tender chicken and vegetables encased in flaky crust, perfect for cozy dinners.

Ingredients

Dairy and Oils

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil

Vegetables

  • 1 large onion, diced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • 2 cloves garlic, minced

Thickening and Broth

  • cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup half-and-half
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon chicken bouillon (optional)

Main Protein and Vegetables

  • cups cooked chicken, shredded or diced
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped
  • to taste Salt and freshly ground black pepper

Pie Crusts

  • 2 pieces pie crusts (store-bought or homemade)
  • 1 egg beaten (for egg wash)

Instructions 

  • Preheat oven to 400°F (200°C). Sauté onions, carrots, celery, and garlic in butter and oil until tender.
  • Stir in flour, then gradually add chicken broth and half-and-half, cooking until thickened. Add thyme, chicken, peas, parsley, salt, and pepper.
  • Divide filling between pie crusts, cover with top crust, seal edges, and brush with beaten egg.
  • Bake for 40 minutes until golden brown. Let cool slightly before serving.

Notes

For extra flavor, add a splash of white wine to the filling during cooking.
