  • 4 pieces bone-in chicken thighs
  • 2 cups buttermilk (substitute: regular milk mixed with 1 tablespoon vinegar or lemon juice)
  • 1 cup all-purpose flour (substitute: gluten-free flour blend)
  • 1/2 cup cornstarch
  • 3 tsp garlic powder (divided)
  • 3 tsp onion powder (divided)
  • 2 tsp smoked paprika (divided)
  • 1/2 tsp cayenne pepper (optional for extra heat)

Instructions 

  • Marinate chicken thighs in buttermilk for at least 30 minutes.
  • Mix flour, cornstarch, garlic powder, onion powder, paprika, cayenne, salt, and pepper in a shallow dish.
  • Dredge marinated chicken in the flour mixture, ensuring even coating.
  • Spray chicken with cooking spray and fry in hot oil until golden and cooked through, about 15-20 minutes.
  • Drain on paper towels and serve hot.
