Instructions
Whisk egg, cottage cheese, and vanilla in a small bowl.
Mix dry ingredients, cut in butter, then add wet ingredients to form sticky dough.
Roll dough into a rectangle, prepare cinnamon filling, spread over dough, and roll into a cylinder.
Wrap in plastic, freeze 1 hour or refrigerate overnight, then cut into scones.
Preheat oven to 400°F, brush scones with milk, and bake 16-18 minutes.
