Delight in these fluffy, protein-packed cinnamon roll scones that are perfect for a quick breakfast or snack.

Ingredients

Wet Ingredients

  • 1 piece egg
  • 0.5 cup cottage cheese (blended)
  • 2 tsp vanilla extract

Dry Ingredients

  • 1.5 cup all-purpose flour
  • 0.5 cup protein powder
  • 0.5 tsp salt
  • 1 tbsp baking powder
  • 3 tbsp light brown sugar

Filling

  • 2 tbsp unsalted butter (melted)
  • 1 tbsp milk
  • 3 tbsp light brown sugar
  • 1 tbsp ground cinnamon

Instructions 

  • Whisk egg, cottage cheese, and vanilla in a small bowl.
  • Mix dry ingredients, cut in butter, then add wet ingredients to form sticky dough.
  • Roll dough into a rectangle, prepare cinnamon filling, spread over dough, and roll into a cylinder.
  • Wrap in plastic, freeze 1 hour or refrigerate overnight, then cut into scones.
  • Preheat oven to 400°F, brush scones with milk, and bake 16-18 minutes.

Notes

For best results, keep dough cold before baking.
