Delight in these homemade chocolate peanut butter eggs, perfect for a sweet treat or gift. Easy to make with rich flavors and a smooth finish.

Ingredients

Dough

  • 3 tbsp unsalted butter (softened to room temperature)
  • 0.5 cup thick smooth peanut butter
  • 0.25 tsp vanilla extract
  • 1.25 cups shredded coconut
  • 2 tbsp powdered sugar
  • a pinch salt
  • 3.5 oz dark chocolate (chopped)
  • 2 tbsp coconut oil
  • a pinch sea salt

Instructions 

  • Mix softened butter, peanut butter, and vanilla until combined.
  • Add shredded coconut, powdered sugar, and salt; mix into a thick mixture.
  • Spoon mixture onto parchment, shape into eggs, and freeze for 30 minutes.
  • Melt chocolate and coconut oil in microwave, stirring every 30 seconds.
  • Dip eggs in melted chocolate, place on parchment, and freeze for 10 minutes. Drizzle with chocolate and sprinkle sea salt.
