Ingredients

Protein

  • 1 pound chicken breasts
  • Salt and pepper

Marinade

  • 1 tablespoon olive oil
  • 2 chipotle peppers in adobo sauce chipotle peppers in adobo sauce
  • 2 tablespoons lime juice
  • 3 tablespoons olive oil
  • 1 clove garlic
  • 1 teaspoon cumin
  • 0.5 teaspoon smoked paprika

Salad

  • 6 cups mixed salad greens
  • 1 avocado avocado
  • 0.25 cup red onion
  • 0.25 cup fresh cilantro
  • 0.5 cup cherry tomatoes
  • 0.25 cup shredded cheddar cheese

Dressing

  • 0.5 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle chili powder
  • 0.5 teaspoon garlic powder
  • to taste Salt and pepper

Instructions 

  • Season chicken with salt and pepper.
  • Whisk marinade ingredients, coat chicken, and let sit for 10 minutes.
  • Cook chicken in a skillet over medium-high heat for 5 minutes per side, then rest and slice.
  • Toss greens, avocado, red onion, cilantro, tomatoes, and cheese in a bowl.
  • Mix mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper for dressing.
  • Add chicken to salad, drizzle with dressing, toss, and serve.
